Tasty Vegetarian White Chicken Chili Recipe In 4 Simple Steps

My husband and I used to work at Ruby Tuesday's as waiters back in the day when we were in college and by far the most popular item that patrons would buy from their menu, without any suggestion from the waiters, would be the White Chicken Chili. My husband used to rave about how good it tasted, and obviously, I was never able to join in all the reindeer games because I didn't eat meat. It didn't occur to me, till now, to attempt to cook a White Chicken Chili Recipe and make it not only meat-free and tasty but also vegan friendly. I must say, this recipe has now become a staple and a favorite in my home, no matter how hot it is outdoors, we never mind eating a bowl of this Vegetarian White "Chixen" Chili.

You will discover that most of the ingredients, for this vegetarian recipe, are items that you likely already have within your kitchen and are simple to find. This Vegetarian White "Chixen" Chili is undoubtedly tasty and will have any vegetarian or meat-eater addicted. I have never eaten the meat version of White Chicken Chili but I am certain it does not have anything on the vegetarian and vegan version.

Vegetarian White "Chixen" Chili Recipe

Ingredients:

·1/4 cup of vegetable oil

·1/2 lb (which is about 12 nuggets) of thawed Soy Delight Vegan Chicken Nuggets, diced in to chunks (these are not breaded)

·3 cloves of garlic, minced

·1 medium onion, chopped

·1 large or 2 small jalapeño peppers, seeded and chopped

·1 fresh green chile, chopped (you can substitute for 1 small can of green chillies with the liquid)

·3 sprigs of fresh oregano, chopped or 1 tsp of dried oregano

·1/4 tsp of black pepper

·1 tsp cumin

·1/2 tsp coriander

·1 1/2 tsp of chili powder

·1/2 tsp cayenne pepper

·2 cans of Northern White Beans, with liquid

·3 cups of vegetable broth

·2 cups of water

·1 vegetable bouillon

·3 tablespoons of cornstarch, mixed with a 2 tsp. of water

Directions:

1. In a large pot, add the vegetable oil and heat on medium heat. Once oil is warm, add the vegan chicken nuggets and sauté for about 5 minutes. Next add the garlic, onion, jalapeño peppers, and green chile. Saute until the onions are soft and clear which should be another 5 minutes.

2. Add the oregano, black pepper, cumin, coriander, chili powder, cayenne pepper to the soy chicken and saute for another minute.

3. Next add, the northern white beans, vegetable broth, water and bouillon to the pot. Stir and cover and let simmer on low for 45 minutes. After 45 minutes, add the cornstarch and water mix, stir, and continue to simmer on low for another 20 minutes.

4. Serve and garnish with cilantro, sour cream and cheese...if you like...but it is so good as is, you may not need to add anything else.

By the way, in case you can not find the Delight Soy Vegan Chicken Nuggets, feel free to work with some other "mock chicken" nugget or patty. Just make sure it is not breaded. You can also use seitan which is a great option!

Vegan Pizza: Tasty Facts, Wide Options

Many new vegans (persons who do not eat meat, eggs or dairy products), or hosts who are serving vegan guests for the first time, may have a hard time coming up with creative, tasty dishes. Vegan pizza is often a simple and easy choice. However, after solving the puzzle up to that point, many people get in a rut and things start to get a little stale.

But there are many facts about vegan pizza that many people -- including long-time vegans -- do not know.

For instance, did you know that the original, authentic, Italian pizza is traditionally vegan, i.e. no meat and no cheese? It is called the Marinara, and because of the simple but special ingredients used, and the cooking method, many pizza connoisseurs choose this pure version as their favourite pizza.

In addition to the Marinara, there are a number of other vegan pizza choices available.

Vegan pizzas are available at your favourite pizza place, you can buy it frozen, or make it at home. While it is not common to find a pizzeria that serves authentic Marinara pizzas, it is easy to get a cheeseless pizza from any pizza restaurant by just asking to hold the cheese.

Very good frozen vegan pizzas are also becoming more readily available, too, and tastier.

Then there is the home-made pizza option, which may be the best choice if you want a more authentic Italian pizza, if you would like to use cheese and meat vegan substitutes, or if you want to use non-traditional pizza crusts.

With regard to toppings, you can go cheeseless (in traditional Italian or modern vegan style), use vegan cheese substitutes, or nutritional yeast "cheese" sauce (very nutritious, rich in protein and B-vitamins). Vegan Cheese substitutes, it must be noted, have not traditionally been able to reproduce the familiar "stringy" quality of melted mozzarella on vegan pizza, with the exception of one brand which is tapioca- and arrowroot- based rather than soy-based.

That's not all. While pizza dough is already vegan, not many people know that there are significant differences in types of flour, and not all flour is available everywhere. The fact is that the single most important component of a pizza is the base, not the toppings. Authentic Italian pizza needs "00" flour, not readily available in North America, but this gives a distinctive airy and stretchy texture, and handles perfectly when forming into a circle.

It is perfectly possible to make good (but not authentic Italian) pizza crusts using regularly available baking flour (beer is often a good addition), or whole wheat flour. But outside of that there are tasty gluten-free pizza crusts available, using tapioca and manioc flour (from Brazil), or seeds, vegetables, and legumes (in a modern vegan variation).

In a more traditional European gourmet mode, one can also use puff pastry as the pizza base to make very interesting vegan pizzas. Sun-dried tomatoes, olive oil, garlic and mustard seeds, mushroom and artichoke, thinly sliced potato with olive oil and rosemary (a traditional European favourite that is virtually unknown in America), all go beautifully on flaky puff pastry.

Meat-Free and Vegan Friendly Kale Salad Recipe - A Tasty and Uncooked Way To Consume Your Greens

Meatless and vegan holiday recipes are probably the most yummiest dishes on the table during the holiday seasons and special events. In fact, consider how some of your favorite holiday dishes. It's not fairly often that I hear people "raving" about how delicious the Turkey, (bless its soul) was. Instead, I usually hear things like, "wow - that mac & cheese was absolutely wonderful," or "I have to get that potato salad recipe." Who would've thought that all of the stars of holiday gatherings are usually side dishes and desserts and are also meat-free?

During the holiday's, my mother would always cook Kale with Turkey Necks (I know...). As I become a vegetarian, I would always have to pass on the "greens" until my dad started making this meat-free and tasty vegetarian kale salad. This meatless recipe is also vegan friendly, which is always a plus, and it is really simple to make and absolutely delicious. Since this kale recipe is not cooked, you will be able to consume the many essential vitamins and nutrients that our green and leafy friends provide the body.

Kale Salad Recipe & Video

Ingredients:

·1 Bunch of Clean Fresh Kale

Dressing Ingredients:

·1/4 cup of Tamari (you can use soy sauce or liquid aminos)

·1/2 cup of water

·3 tablespoons of olive oil

·Juice from a 1/2 lemon

·1 clove garlic

·1/2 cup of sunflower seeds (optional)

Directions:

1. Chop the kale in to small pieces and place in a large bowl (if you have a bowl with a lid so that you can toss the kale salad later) and set aside.

2. In a blender, pour the Tamari, water, olive oil, lemon juice, and clove and blend for about 1 minute. Taste the dressing to make sure it is not too salty. If the dressing is too salty, then add some more water and blend for another 30 seconds.

3. Pour the dressing on the kale and sprinkle the sunflower seeds on the kale.

4. Toss the salad, cover, and place in the fridge and let it marinade for at least 4 hours.

The more time you allow the Kale to soak in the dressing, the better. I would highly recommend making this salad the night before you plan to eat it as this allows plenty of time for all of the flavors of the dressing to mesh together with the Kale (or your green of choice). Also, fellow vegetarians, let me know if you try this recipe with a different type of green (i.e. turnip or collard). I have just prepared this salad recipe with kale and would be interested to find out how the substitute of greens worked out to suit your needs and taste buds. I am sure it will be just as fulfilling...but of course, inquiring vegetarian minds want to know!

You can also spruce this salad up by adding some a variety of flavors and textures by simply sprinkling a handful of sunflower seed kernels on top of the salad and even adding some sliced cherry tomatoes. Enjoy!
